In these areas, truffles which usually grow about 30 centimeters or approximately one foot are found under the ground. Truffles with pungent flavor such as winter varieties can be stored in whole eggs or uncooked rice that can absorb excess flavor. If you want to freeze the truffles, you can keep them in olive oil before doing that. Make sure that the truffles are 100% covered in oil. This storage method will prevent freezer burn and capture the aroma of the truffle into the oil, hence the truffle aroma. Don t store the truffles for too long, lest they ll lose their flavor. Truffles easily diminish the strength of their flavor, so consume them soon after you purchased them. Use truffles sparingly. They re not like garlic or bell peppers that you can add to your dishes in generous amounts. Remember, these mushrooms already have strong smell and flavor, so a few slices or a little shavings will do. Preserved truffles do not have the same level of flavour as the fresh one. Italian white truffles go great with pasta, eggs, butter, cream, chicken, walnuts, risotto and mildly bitter greens.
